Sun dried tomatoes

Little round Principe Borghese Tomatoes are meant to be dehydrated. It's their destiny.

It sounds so exotic, doesn't it? Sun dried tomatoes!


Nope. They simply spent a night in the dehydrator.

And they keep forever.

Well, not really forever, but you know.

Dehydrating is a great way to preserve what we grow. Fresh tomatoes only last for so long (except those amazing Long Keepers). Canning is so much work, although for some things it really is worth it. Freezing requires freezer space, and I do freeze lots and lots of tomatoes, but not the Principe Borghese.


They make an amazing addition to crusty homemade French bread, or pizza crusts, or even on top of the pizza. I can't even begin to describe the flavor they add to egg dishes.

They are so pretty, like little vegetable diamonds.


What may surprise you, is that these crispy little tomatoes are sweet. Very, very sweet. They have a strange strong tomato flavored super sweetness that my boys cannot keep their hands off.

What mom would say no to a request for healthy sweet treats like that?


"Mommy, nexterday I want some more potatoes again."

"Why do you like them?"

"Because I like to yell when I eat them!"

Just beautiful. I love the scattered first picture, love how it's focused. And I really love all of the little tomatoes lined up. Especially since the background is bright white, the red just jumps. But my favorite is the last one. Just gorgeous...and nexterday is awesome.

Beautiful tomatoes! I love the sweet ones. And yes, I pop them like candy. I wish my little guy would learn to like them, but at this point, the only way he likes his tomatoes is as ketchup. ;)

I never thought of putting tomatoes in the dehydrator! I'll have to do that once our tomatoes are grown.

Love the seeds/detail in your first two pictures and the hint of a smile on your son's face as he gets ready to eat one of the tomatoes.

What a unique take on this week's theme! I just used some of these (store bought) in a dish last night. So now you have me thinking I need to try this out at the end of summer. Have you ever tried doing this in the oven??

Melissa, yes I did cut them all. It really wasn't too much work. Sabrina, I think they can be done in the oven, temp set very low and with the door propped open to let the moisture escape. Also, it works best with tomatoes that are not really juicy. Roma tomatoes work well too.

what spacing do you plant the p.b. at? Do you prune? I know they are determinate and traditionally shouldn't be pruned, but with my limited raised bed space, I'm trying to figure out if it will work.

I think I planted them three feet apart? Not sure. I didn't prune them. They didn't get to be very large plants, but we had a unusually cool summer which meant the tomatoes didn't grow the best. A large pot would work too, I suppose.
